This is a great recipe for those who don't cook fish often and want to ease into learning how. It's so quick and one of the cleanest dishes I've made. Very few dishes to clean up after. I'm quickly learning the power of foil.
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon sage
- Kosher salt and freshly ground black pepper, to taste
- 2 pounds salmon
Preheat oven to 375 degrees F. Line a baking sheet with foil.
In a small bowl, whisk together 1/4 cup honey, 2 cloves of garlic, 2 Tbsp olive oil, pinch of sage, salt and pepper, to taste. Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the honey mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
Place into oven and bake until cooked through, about 15-20 minutes.
Served here with brown rice and steamed carrots with a hint of honey and maple syrup. And of course some Irish Whiskey in honor of St. Patrick.
